Leek Salad with Carrot and Celery

This is a recipe of my daughter.


  •   8-10 carrots
  •   1 cup of sweet pickled celery
  •   2 small leeks cut in peaces
  •   vinegar
  •   sunflower oil
  •   salt
  •   ground black pepper
  •   0.5 cup mayonnaise
  •   natural mineral water
  •   few drops of lemon juice


  1. Grate carrots and sprinkle with few drops of lemon juice (carrot will keep fresh color)
  2. Drain pickled celery
  3. Season mayonnaise with salt, black pepper, vinegar and few tbsp of natural mineral water
  4. Mix all ingredients together
  5. Let the mixture sit in a fridge for few hours
  6. If the salad will loose too much water, drain it and season again if it’s needed
  7. Serve with fresh baguette or as a sidedish to wiener schnitzel


You can replace mayonnaise with yogurt, but don’t use natural mineral water in that case. Also you can use fresh grated apples instead of celery.
